Jim's Everything but the Kitchen Sink Meatloaf
Meatloaf Ingredients:
- 1 small yellow onion chopped
- 3 cloves minced garlic
- Dash of Worcestershire
- 1 cup mushrooms finely chopped
- 1 cup of finely chopped bell peppers
- 2 pounds of ground beef (Jim prefers 80/20)
- 1 cup of breadcrumbs or Stove Top Stuffing
- 1 cup of milk
- 1 egg
- ½ cup ketchup
- ¼ cup salsa
- 1 tablespoon yellow mustard
Topping Ingredients:
- ½ cup ketchup
- 2 tablespoons brown sugar
Directions: Preheat oven to 350 degrees. Sautee the onions and garlic in a mix of canola oil and butter until translucent. Add a dash of Worcestershire Sauce while cooking.
Sautee peppers and mushrooms in a separate pan until fully cooked.
Add ground beef to a large bowl and use your hands to loosen it up. Add onions and garlic, peppers and mushrooms, raw egg, breadcrumbs, milk, ketchup, salsa, mustard, and a pinch of brown sugar. Mix thoroughly with your hands until all the ingredients are combined.
Loosely add the meat to fill up a greased loaf pan being careful not to pack it too tight. Bake at 350 for approximately 40 minutes. Drain the excess grease into a can or somewhere safe. Turn the loaf on to a baking sheet and spread the ketchup mixture on top. Bake for an additional 15 minutes and enjoy!
